INGREDIENTS:
1 CUP QUINOA COOKED
½ TBSP EXTRA VIRGIN OLIVE OIL
½ TBSP FRESH LEMON JUICE
½ TBSP LIME ZEST
½ TBSP FRESH PARSLEY, CHOPPED
CRUSHED RED CHILLS
FRESHLY GROUND PEPPER
DIRECTIONS:
Cook quinoa. In a medium-size frying pan, sauté extra virgin olive oil with lemon and lime juices for 2 minutes, stirring constantly.
Add prawns; cook 3-4 minutes. Turn prawns, top with lime and lemon zest, parsley and chilis.
Toss, then place prawns on quinoa and serve.
